Eufrasia DeCarolis Obituary
Eufrasia (Rosati) DeCarolis was born September 16,1934 in Atina Italy.
She grew up with her sisters, Flora and Liliana, on a farm where they worked as tenant farmers in a beautiful valley in Lazio. She learned how to cook at a young age and helped make the food for the workers who helped with the harvests. She also helped tend to the crops and the animals. She was only ten years old when WWII reached her hometown.
When she met Nicola DeCarolis, they married in Italy and soon moved to Newark, New Jersey, where she worked as a seamstress making police uniforms. She also worked briefly for Ronald Tool making metal parts. She worked as a housekeeper at the White Deer Motel after her husband bought it with relatives. After the business was sold she continued to work independently as a seamstress making alterations. She even did some catering making lunches for employees at a local garden center in Pennsylvania when she lived there a few years ago.
Eufrasia and Nicola had two sons, Leo and Roberto. She lived with her family in Clark for a few years, then moved to Kenilworth, Westfield, Parsippany, Lebanon and eventually she and Nic moved to Stroudsburg, PA. She was a very social person and enjoyed being involved with her local churches and spending time with her husband's extended family.
Eufrasia, also known as Francine, was passionate about cooking, baking, sewing and gardening. Cooking and baking were her favorite ways to spend time and to give to her friends and family. She loved flowers and it gave her great satisfaction and happiness to grow flowers and herbs in her home. She also enjoyed traveling.
She is predeceased by her parents, Nunziato and Virginia, her husband Nicola, her sister Liliana, and her brothers and sisters-in-law. She is survived by her children, Leo and Roberto, and their children, Anna, Catherine, Christopher and Andrea as well her nieces Anna, Flora and Alida and her sister-in-law Gina as well as many nieces and nephews and their children.
